What is IMMERSION in a Coffee Maker?

What is IMMERSION?
You are probably familiar with classic DRIP coffee which pours hot water over ground coffee. It uses gravity to draw water through the coffee grounds and brings out the full flavor and aroma, delivering a crisp, clear taste. The bitterness, acidity, sweetness, richness and aroma of the coffee are all well-balanced to maximize the natural taste of the coffee. Although quickness and simplicity are beneficial, maintaining consistency may be difficult due to temperature instability, unstable pouring speed and other manual human errors.

Compared to the DRIP method, IMMERSION is a brewing method that draws out the flavor by immersing the coffee grounds in hot water. The taste is less likely to be inconsistent as it makes the coffee grounds and hot water come into contact evenly. Immersing the coffee grounds allows the hot water to cover the entire grounds and bring out the natural taste of the coffee beans. The process suppresses excess bitterness, acidity, and other unpleasant bitter or astringent tastes, so the overall flavor is not too strong, and even the sweetness, which is often overpowered by other flavors, is more prominent. Typical methods include a siphon or a French press.
