Baby Spinach and Carrot Cocktail
Get a serving of vegetables at happy hour! This vodka cocktail is loaded with baby spinach, carrots and apple juice. Splash with tonic and lemon juice for a carrot cocktail that packs a punch.

Ingredients
- 2 cups baby spinach, washed and cut
- 1 1/2 carrot, peeled and cut into small pieces
- 1 cup apple juice
- 1 1/2 tsp lemon juice
- 1/3 cup vodka
- 1/3 cup tonic water
- Ice cubes to taste
- 3 slices of lemon (for garnish)
- 3 mint leaves (for garnish)
Directions
- Place the baby spinach, carrots, apple juice, and lemon juice in a container and secure the lid.
- Turn the dial to start the blender and set the speed to “10”. Blend for 1 minute 30 seconds.
- Pour ice and vodka into a glass, fill the glass with tonic water, and stir with a bar spoon.
- Garnish with lemon and mint if desired.
THE EASIEST VEGETABLE COCKTAIL
Veggie cocktails aren’t a new thing. From the classic bloody mary to a modern gin rocket, bartenders and mixologists have been busy incorporating vegetables into drinks for a good reason. Veggies are delicious – and just as versatile as their fruity compatriots. For this vodka cocktail, we use baby spinach for verdant freshness, and carrots for their natural earthy sweetness. That sweetness pairs up with a splash of apple juice and fresh lemon juice for the full on sweet and sour effect. We love the quinine loaded fizz of tonic water with this particular drink. Best part: you can make it at home in less than 5 minutes.
HOW TO MAKE A CARROT AND SPINACH COCKTAIL
Just load the baby spinach, apple juice, carrot pieces and lemon juice into the jar of your Tiger blender. Blend that mixture for 90 seconds with the speed setting set to 10. Meanwhile, get a Collins glass or rocks glass set up with ice, vodka and tonic water – then add the veggie mixture to taste and mix with a cocktail spoon. The final step is kicking your feet up and sipping your carrot cocktail at the end of a long day. You’ve earned it! Bonus points for ignoring any work emails that come in at this point.
TIPS AND VARIATIONS
- Switch juices. We love the sweetness of apple juice – but orange juice or pineapple juice would introduce a decidedly tropical flavor.
- Nix the tonic. Plain sparkling water keeps the bubbles but loses the distinct quinine flavor of tonic water.
- Make it stronger (or dial it back). Use as much or as little vodka as you like.
- Use different vegetables. While the flavors will inevitably vary depending on what you choose, feel free to use whatever’s handy in the crisper drawer. We do!
Make a mocktail. Just leave the vodka out and use a little extra tonic or seltzer for a virgin drink. Sometimes a cocktail is about making something special for yourself to enjoy more than anything else. Perfect when you have an early morning meeting the next day.
