WHAT IS JAPANESE CARROT GINGER DRESSING
Have you ever been to a Japanese steakhouse or sushi restaurant and tried the starter salad? Chances are, this was the dressing on that salad. It’s a deceptively simple mixture that features raw carrots, fresh ginger, soy sauce and salad oil. We’re using extra virgin olive oil in this recipe, but neutral oils like grapeseed oil work as well.
WHAT DOES CARROT DRESSING TASTE LIKE
The flavors are a balance of refreshing, bright, savory and sweet. Carrots, garlic and onions lend an earthiness and sharpness – while the fresh ginger delivers a little zing and a slow burn (without being spicy). The soy sauce imparts umami, which is contrasted by the sweetness of sugar and apple. Vinegar brings a little acidity to the party. The end result is a Japanese salad dressing that is fresh, salty, sweet and slightly tangy. And you can use it on more than just salads!
HOW TO MAKE CARROT GINGER DRESSING

SERVING VARIATIONS AND OTHER USES
While this Japanese salad dressing is a plug and play solution for salad greens in any form, there are tons of other practical uses.
- Make it as a marinade for your favorite meat or seafood. Remember, when marinating, longer equals stronger flavors.
- Use it as a finishing sauce for steak or fish. This works for both cooked and raw dishes. It’s especially delicious atop beef carpaccio and yellowtail sashimi.
- This carrot ginger dressing also makes a wonderful all-purpose dipping sauce. Use it as a chicken wing sauce, with mozzarella sticks or even shrimp cocktail.
- Put a little in your potato salad for a delicious zing everyone will love.
