THREE INGREDIENTS. ONE GREAT PEACH SORBET

Dessert is our favorite part of any meal. Bonus points for a homemade sorbet with minimal ingredients that still manages to pop with maximum flavor. For this peach sorbet, we’re using canned peaches and their syrup for a readymade base of flavor. Yogurt brings a creaminess and slight tang to the party. It’s a special thing when three ingredients blend together to create something greater than the sum of their parts.

HOW TO MAKE PEACH SORBET

Start by placing the peaches, yogurt and peach syrup into the jar of your Tiger blender. Blend for 60 seconds with the speed dial set to around 7. Transfer the blended mixture to a metal container and chuck it in the freezer.

Now, these next steps are the secret to perfect sorbet:

  1. Freeze the blended mixture until it is semi-frozen, but not yet completely solidified.
  2. Then mix the semi-frozen mixture with a fork or spoon. This incorporates air and results in an overall smoother sorbet.
  3. Stick the container back in the freezer for ~3 to 4 hours, until the sorbet is properly frozen.

Pro tip: For the initial stint in the freezer, keep an eye on it! The sorbet should be solidifying, but not set hard. In testing, we found the perfect time to mix with a fork came at about the 4 hour mark. Depending on your freezer, your mileage may vary.

RECIPE VARIATIONS

  • Add ginger for mild heat. Freshly grated ginger adds a little zing and a slow burn to this otherwise sweet dessert.
  • Make it vegan. Simply swap out the dairy yogurt for a plant based alternative. Oat yogurt is our favorite – but soy and almond based yogurts work as well.

Try a different canned fruit. Canned pineapple (and its syrup) is great. And we may have just found the best use for that can of fruit cocktail sitting in the furthermost reaches of the kitchen cabinet!
