Multi-Cooker Cream of Mushroom Soup

This cream of mushroom soup is essentially a rich and hearty soup. It’s incredibly simple to prepare and makes for the perfect comfort meal when you’re craving a taste of home-cooked goodness.

Ingredients

  • 4 1/2 tablespoon Butter
  • 1 1/2 Small onion, finely chopped
  • 3 Garlic cloves, minced
  • 6 2/3 cups (1 1/3 lbs) Sliced button mushrooms
  • 1 1/2 tablespoon Dry sherry
  • 3 cups Low sodium vegetable broth
  • 3/4 cup Water
  • 1 1/2 teaspoon Salt
  • 1/5 teaspoon Ground black pepper
  • 3/4 cup Heavy cream

Directions

  • Preset the SAUTE menu with HIGH setting for 20 minutes.
  • Once the saute menu I is set, add butter, onion slices, and garlic and cook for 3-4 minutes until onions are translucent.
  • Add mushrooms and cook for 5-7 minutes or until tender.
  • Add the sherry, vegetable broth, water, salt, and pepper and stir.
  • Close the lid and choose the Programmed Menu No.05. Press the [Start] key.
  • When there is s about 20 minutes left to the cooking process, stir in the cream.
  • Transfer the soup to a blender and blend until smooth. Serve.

Start by selecting the Sauté function and adding onions and garlic to the inner pot with butter. Cook until the onions turn translucent but not brown. Then, add sliced mushrooms and sauté until they become tender.

This initial step releases the mushrooms’ umami essence—and let’s be honest, there’s nothing quite like the aroma of onions and garlic cooking together. It’s the signature scent of many comforting meals!

Next, add all ingredients (except the cream) to the inner pot of your Tiger multi-cooker and choose Programmed Menu #5 to begin cooking. When about 20 minutes remain in the cycle, stir in the cream.

For the final step, blend the soup in a food processor or blender until it reaches your desired consistency. A fully blended version creates a luxurious creaminess, while pulsing it lightly leaves some mushroom pieces for added texture.
