Multi-Cooker Gluten-Free Turkey Pumpkin Chili

This turkey pumpkin chili is the ultimate dish for game-day tailgating or a cozy dinner with family and friends. The best part? It can be easily prepared in a multi-cooker for a hassle-free, slow-cooked meal!

If a milder flavor is preferred, the Anaheim or jalapeño chili peppers can simply be omitted.

Ingredients

  • 1 lbs Ground turkey
  • 1 Medium onion, diced
  • 4 Garlic cloves, minced
  • 1 Anaheim or jalapeno chili pepper (minced, approximately 1/3 cup)
  • 1 tbsp Olive oil
  • 2 1/2 tbsp chili powder
  • 1 1/2 tsp Cumin
  • 1/4 tsp Red cayenne pepper
  • 1/4 tsp Ground cinnamon
  • 1/8 tsp Ground cloves
  • 1 tsp Salt
  • 1 ¾ cups Pumpkin puree
  • 1 can (15 oz.) Black beans, drained
  • 1 can (15 oz.) Kidney beans, drained
  • 1 can (15 oz) Unsalted diced tomatoes (drained) or 2 cups of fresh tomatoes, chopped
  • 1 Sweet red bell pepper (chopped, approximately 1 cup)
  • 3/4 cup low sodium chicken broth

Directions

  • Preset the SAUTE menu with HIGH setting for 20 minutes.
  • Place olive oil in the inner pot and saute the onions, Anaheim chili or jalapeno and garlic. Stir and cook for about 2 minutes and then add in turkey to cook until brown.
  • Add all of the spices (chili powder, cumin, cayenne pepper, cinnamon, cloves, salt) and mix with meat.
  • Add the remaining ingredients (pumpkin puree, black and kidney beans, diced tomatoes, red bell peppers and chicken broth). Stir until well combined.
  • Select the Programmed Menu No.11. Press the [Start] key.
  • Once cooking is complete, serve in a bowl and add desired toppings on top.
