Multi-Cooker Quinoa Chicken Salad

Looking for a nutritious quinoa chicken salad packed with flavor? You’re in the right place! And the best part? This easy quinoa recipe can be effortlessly prepared in your multi-cooker.
Ingredients
- 1 cup Quinoa
- 2 cups Water
- ½ teapoonSalt
- 1 lbs boneless, skinless chicken breasts
- 4 cups Spinach
Dressing
- ¼ cup Extra-virgin olive oil
- ½ tablespoon Lemon juice
- 2 tablespoon Red wine vinegar
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Directions
- Rinse quinoa under cold water and drain.
- Place quinoa, water and salt in the rice cooker. Stir and select [Quinoa] menu. Press [Start].
- When complete, transfer the quinoa in a large bowl and fluff with a fork. Let cool to room temperature.
- Meanwhile, chop the chicken in bite size pieces and sauté using the [Sauté] menu.
- Place all ingredients for the dressing in a container with a lid and seal. Shake until liquid has emulsified.
- Place cooled quinoa and chicken on top of spinach and pour dressing to serve.
