Ingredients

  • 3 garlic cloves (minced)
  • 1 small onion (finely chopped)
  • 2 celery stalk (finely chopped)
  • 1 small red bell pepper (finely chopped)
  • ½ cup frozen corn
  • 1 cup black beans, drained
  • 1 cup cannellini beans, drained
  • 1 28oz can of diced tomatoes, drained
  • 1 cup vegetable broth
  • 1 ½ tbsp chili powder
  • 2 tsp cumin powder
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp kosher salt

Directions

  • Place all the ingredients in the multi-cooker inner pot and set the Programmed Menu No.13.
  • Serve with freshly chopped cilantro, avocado slices, tortilla chips or other toppings of your choice.
  • (Optional) For the best texture, transfer 1 cup of the chili into a blender and blend until smooth. Put it back into the rice cooker and stir.
