Matcha Adzuki Bean Cake

When you need a little sweetness in your life, get this matcha adzuki bean cake in your rice cooker immediately. It’s pillowy perfection!

Ingredients

Ingredients below are for a 5.5-cup cooker.

  • 150g pancake flour
  • 30g matcha powder
  • Pinch of salt
  • 1 ½ tbsp room temperature butter, or vegan butter
  • 2 large eggs
  • 125ml milk or unsweetened oat milk
  •  7.4oz can prepared adzuki beans

Directions

  • Mix the pancake flour and matcha powder in a bowl. Add a pinch of salt and stir.
  • Stir in the butter and eggs and mix until well combined.
  • Stir in the milk and mix until the dough is smooth.
  • Add the prepared adzuki beans and mix well.
  • Spray the rice cooker inner pot with cooking spray, or brush with oil.
  • Pour the mixture in the rice cooker inner pot and tap the pot on a flat surface a few times to remove the air bubbles.
  • Place the inner pot in the rice cooker and select the [Slow Cook] function. Set the timer to 50 minutes and press start.
  • When the cooking is done, take a kitchen towel to cover both handles of the inner pot, and take it out. Put a plate on top and flip the inner pot over so the cake falls onto the plate. Serve.

WHAT IS MATCHA?

Matcha (抹茶) is Japanese green tea leaves that have been ground to a fine powder. It is most commonly mixed with hot water and consumed as a drink. However, it also can be used as an ingredient in many Japanese dessert favorites.

WHAT ARE ADZUKI BEANS?

Adzuki beans (アズキ) are red beans that are very popular in Japanese desserts as well. When cooked and then mixed with sugar and a dash of salt, they are mashed into anko (餡子) which is a sweet red bean paste.

We’re using canned (and already cooked) adzuki beans for this matcha adzuki bean cake – to keep this dessert recipe on the easy side.

HOW TO MAKE MATCHA CAKE IN A RICE COOKER

Have a look at the ingredients and directions tabs on this page for step by step instructions on making your dough.

Once prepared, add it to the inner pot of your Tiger multifunctional rice cooker (remember to spray a bit of cooking spray beforehand so it’s easy to take out once cooked!).

You’ll use the Slow Cook function for 50 minutes. There’s no need to keep your eye on the oven – because your rice cooker will ‘bake’ this luxurious cake to perfection.
